In a small bowl combine dark chocolate chips and coconut oil, microwave in 30 second increments, and stir in between. Put melted chocolate in mini donut mold, then place in freezer while your cookies bake. Preheat oven to 350 F. In a bowl combine the peanut butter and coconut sugar, whisk in the eggs, and add the remaining ingredients. Roll into 12 balls and then flatten with a fork. Bake for 10 minutes, remove from heat. Pull out the chocolate donuts and remove from mold. While cookies are still hot push chocolate donuts into the cookies. Then sprinkle with powdered sugar.
