Lately I have been all about the dessert. But who wouldn’t be during summer.

Whether we like it or not things seem to slow down some during the summer. Work seems to be a little more laid back with colleagues and clients going on vacation here and there. Weekends tend to be more relaxed, sleeping in a little later or enjoying the day laying in the sun.

People just tend to be more calm. The hustle and bustle is minimal. And the same with eating.

Ice cream becomes a must. BBQ’s include berry cobblers and pies. And frozen treats are in plethora to escape the heat.

And that is exactly why these Raspberry Yogurt Frozen Cups were created.

I love dessert, but I don’t see a problem with trying to make them as nutrient dense as possible, without skipping out on the flavor that is.

And I know you might be rolling your eyes. Yes I eat sugary and delicious desserts, but I have found they don’t make me feel good.

I get a sugar rush and then feel sluggish and heavy. So my motto has been, when you want to indulge in dessert each night, make it healthy or make it with ingredients that make you feel good, energized and confident.

These Raspberry Yogurt Frozen Cups do just that for me.

They are kid friendly, gluten free and delicious right out of the freezer. I used a honey flavored full fat greek yogurt, pilled with raspberry filling and walnut topping for an added crunch.

 

They are the perfect quick and easy dessert to pop one in your mouth each night after dinner. Because nothing is better than something sweet to end your night.

Using a muffin tin and paper muffin liners, layer with yogurt then raspberries then yogurt and topped with crushed or whole walnuts. Freeze for 20-3o minutes and enjoy!
