I have always loved challenging myself in the kitchen. Taking something delicious and dessert like and making it something healthy you can enjoy on the daily. I love to recreate classic recipes. No bake cookies, peanut butter cookies, and chocolate peanut butter cup desserts.

When I started eating gluten and dairy free due to intolerances and stomach issues it opened up a whole new world to products out there created to make recreating your favorite foods and desserts from healthy, all natural ingredients. Coconut flour, oat flour, banana flour, and one of my favorites almond flour.

Each of these flours have their own texture, taste and purpose in recreating these foods. Coconut flour has been great for making cake like things. If you are looking for a fluffy texture this is your pal. Oat flour can be dense, I love to substitute oat flour for cookies and bars. But almond flour to me has been the most diverse. The easiest to work with. And one of the most delicious.

Protein Packed Banana Bread

It is low carb, 1/4 cup containing only 6 grams of carbs. It is high in fat, with 14 grams of fat per serving. Along with being low carb naturally almonds provide a dose of magnesium and vitamin E and monounsaturated fats.

I love adding it to breads, cookies, cakes, and a replacement for crusts for quiche and pie.

  1. Preheat oven to 325 F. Mash your bananas, then add in protein powder and almond flour. Mix until they are combined then start adding your almond milk until you get a liquid mixture. Stir in your raisins. Then in a greased bread loaf (line with parchment and spray for easy clean up) pour in mixture. Top with sunflower seeds and bake 30-40 minutes until tooth pick comes out clean.
