I have said it before and I will say it again, there is no better way to say thank you than to make someone something.

I have always been a big fan of homemade gifts. In fact the first gift I ever gave my husband was a handmade gift. It may have partly been because I lacked money to buy him something. But more so because the time it takes to make something is more meaningful than something that will go out of style in a year or two.

That is where my love of baking came from. I used to make friends birthday cakes in high school. That turned into baking their parents birthday cakes. And then their siblings.

I never missed an opportunity to share some homemade food at a school get together or pot luck.

Nowadays living hundreds of miles from my family, the opportunity to bake for others has become less and less. So every opportunity I get to share my baking with others I do.

It looks a little different these days than back then though, like these gluten free orange cranberry muffins.

  1. Preheat oven to 350 F. In a bowl whisk the eggs, almond milk, and honey. Add in almond flour, coconut flour, baking powder and cinnamon. Once combined add dried cranberries and orange zest and fold in. Separate mix into muffin tins. Bake 20-25 minutes.
