GF Matcha Donuts with Strawberry Icing

These GF Matcha Donuts with Strawberry Icing are perfection with the balance of powdered matcha and sweet strawberry icing. They are gluten free, using a banana based recipe and dairy free, including the icing.

I will be the first to admit that wedding planning while evacuating for a Hurricane can be so dang stressful.

The past two weeks have been nothing but crazy for me. But as I got majorly stressed out on a Monday with a to-do list so long I can’t even remember everything that should be on it, I am realizing that things are starting to come together.

No one prepares you for planning a wedding while continuing doing life at the same time. But I think it is just one thing that prepares you for times that will be way worse, like having your first child.

With that said, I have been wanting to get this recipe out there for you guys for a couple weeks.

Recently I entered a contest by Kiss Me Organics. I received a sample of their matcha powder. And this stuff is amazing for cooking and matcha lattes, which I am sure you all know by now how much I love matcha lattes.

The only thing I could think of to make with the matcha powder was gf donuts. Donuts have been near and dear to my heart after starting 13 Donuts Bakery. And even though we do not have much time for it right now I couldn’t help but come up with a new donut recipe.

What is better to pair with matcha than a strawberry icing.

GF Matcha Donuts with Strawberry Icing
Instructions
  1. Preheat oven to 350F. In a bowl mash 2 ripe bananas. In a separate bowl whisk two whole eggs (large or medium). Combine eggs with the bananas, then add the remaining ingredients, coconut flour, hemp hearts, MCT oil and matcha powder. Once combined in a greased donut pan, add your donut dough 1/2-3/4 of the way up. Bake for 15 minutes or until the bottoms are slightly browned. Remove and let cool then pop out of the donut tray. For icing, chop 1/4 cup fresh strawberries, then place in blender to puree. Add your pureed strawberries to a bowl. Melt coconut oil then add to strawberries. Add powdered sugar until you get an icing consistency, then drizzle onto donuts.
