Anyone else out there lactose intolerant? Learning to avoid cream based dishes and cheese gets easier, but what I don’t think gets easier is saying no to ice cream. The perfect summer treat to help you cool down. After moving to Georgia and daily temperatures in the 90’s sometimes more ice cream is always on my mind.
But unless I want to be hurled over with stomach pains the rest of the day, ice cream isn’t always the best option. Don’t get me wrong I love the dairy free ice creams. So Delicious has a fantastic line up. They have cashew milk ice creams, almond milk ice creams and soy milk ice creams. And I have to give them credit they even have cookie dough, cookies n cream, and mint chip just to name a few. I even ran into some ice cream bars and ice cream sandwiches.

But as delicious as these ice creams are, man the cost is just ridiculous. At least $5 for a pint… I don’t know but even with a full time job I am still living the poor college student life.
So when sweet treats aren’t an option, I do what any food blogger does, I make my own. And that is how this chocolate peanut butter banana cups got created.
Lately I have been dabbling with making my own chocolate, combining cocoa powder, honey and coconut oil it is so easy and so cheap. And with chocolate comes peanut butter in my eyes.

In a sauce pan melt the cocoa powder, honey and coconut oil. Slice the bananas. In a mini muffin tin, place banana on bottom, then top with 1 t peanut butter and top with chocolate. Freeze for about 20 minutes until the chocolate has harden.
