I have always loved making banana bread as a quick snack to grab throughout the day. What I don’t love is the banana recipes made for it seems miniature loafs of bread.

It seems like every time I go to make a banana bread recipe it doesn’t even cover half the bread loaf pan, leaving me with a mini slice of banana bread.

I don’t know about you guys, but with insanity workouts sometimes I don’t even feel like I ate a thing, even with a scoop of nut butter on top.

So I got this great idea to double the recipe for an actual slice of bread. Unfortunately when I went to make the bread, we only had about two bananas total, so the chocolate chip pumpkin banana bread was formed.

The banana bread recipe is the exact same as the pumpkin bread recipe, so you don’t need double ingredients. The chocolate chips are optional, but I love adding chocolate chips to mine, and it was the perfect divider.

  1. Preheat oven to 305 F. In two bowls separate your pumpkin and banana. Then mix in the remaining ingredients, each serving in each bowl except the chocolate chips. Mix together. In a bread loaf, grease with coconut oil, then layer in your banana bread. Spread 1/4 cup the chocolate chips on top of the layer, then add pumpkin bread on top. Then spread the remaining chocolate chips on top. Bake 40-45 minutes until baked throughout.
