I used to try and avoid anything outside of my comfort zone. I have always been a quiet person, so to me giving a speech in front of more than one person got me nervous just by the thought of it. So I would avoid classes in school that required presentations.

Well that quickly ended my freshmen year of college, when I was forced to take a speech class. That year I gave 4 speeches, ranging from 2 minutes to 10 minutes.

I remember the first one I gave. I stood up behind the podium to hide myself as best I could. I had note cards detailing each line. I spoke quietly. Voice nervous and shaky, stumbling over words here abanana blondiesnd there.

I didn’t like it, and I still don’t like giving speeches but I can do it now.

Life is full of things we don’t want to do, or don’t like to do. But there is nothing like the feeling when you face your free. That feeling of freedom. That feeling of relief. That feeling of satisfaction.

Now what you probably really came for. These banana blondies are gluten free, dairy free and paleo. Naturally sweetened with bananas and coconut sugar, they are the perfect light sweet treat.

You can easily add chocolate chips, cranraisins or raisins. Pumpkin is also an easy substitute for a fall twist on this recipe.

  1. Preheat oven to 350 F. In a bowl start by mashing your bananas, then add a whisked egg to the mix. Once combined add your dry ingredients, baking powder, gf flour, and coconut sugar. Once mixed, slowly add milk, start with 1/4 cup and add as needed for a batter mixture. Mix in your raisins. Then in a greased 9x9 pan, pour batter. Cook for 20-30 minutes or until the blondie is completely cooked. Pull out the oven and let cool to room temperature. Enjoy!
