As you know I have a true love for PB cups, just check out last week’s PB&J Fudge Cups. These AB Cookie Dough Cups combine Simple Mills chocolate chip cookies, Trader Joe’s mixed nut butter and homemade cacao chocolate. They are one of the easiest and delicious pop out of the freezer for a sweet treat dessert.

Growing up my parents always bought the prepackaged cookie dough. Not the ones in tubes but the ones that were already rolled out and ready to pop in the oven.

It was out of convenience and not having to worry about the multiple ingredients needed to make homemade cookies on hand. But there was also another positive to these cookies, the cookie dough eating that occurred.

I remember my sister and I would always pop open the fridge and sneak cookie dough from time to time. There were hardly ever times we had a full batch to bake.

I think most people can agree cookie dough is the bomb.com. In fact there are many companies making made to eat cookie dough these days.

And that is where my inspiration for these AB cookie dough cups came from. The best of both worlds in my families opinion, peanut butter cups and cookies all at the same time.

Instructions
  1. In a bowl add 1/2 cup almond butter, 2 T coconut oil and microwave for 30 seconds. Once coconut oil is melted add the vanilla and honey and stir. Crush the 3-4 cookies into the bowl. In another bowl add 2 T almond butter and 3 T coconut oil and microwave for 30 seconds. Add the cacao powder, vanilla and honey in a bowl. In a muffin tin, add 1 T of cacao mixture, then add 1 T cookie almond butter mixture. Finally add 1 t cacao mixture on top. Stick in freezer for 20 minutes.
